Where do I even begin with the grilled pastrami burger with spicy brown mustard mayo?  This burger has so much going on.  Each bite is filled with a punch of flavors!

I love layering flavors into food especially the grilled pastrami burger with spicy brown mustard mayo.

The great thing about making burgers, is you can make it your way.  Top it with anything you like.  Be sure to use good grass fed beef that is 80% beef and 20% fat.  The fat in the meat creates moisture.  All a great burger patty needs is salt and pepper.  But sometimes I like to kick it up a notch.  I’m using a bit of fresh parsley, bbq sauce, shallots, thin sliced garlic, salt and pepper.

Gently, every so gently mix the burger ingredients with a fork.  If you mix it with your hands and squish it through your fingers, you will end up with a texture that resembles meat loaf.

Form 4 quarter pound patties and make a slight indention in the middle of each patty.  This will help prevent the burger from shrinking so much.  If you want to push the burger over-the-top, make homemade my Brioche Burger Buns

Pick your favorite burger toppings.  For a pastrami burger I love crunchy spicy pickles, tart and spicy pepperoncini, pickled or grilled red onions, crisp onions, cheddar cheese, tomatoes, and piles of pastrami.  Not to mention a smear of spicy brown mustard and mayo.  Heaven!  One of my favorite BBQ sauces is from this post:  Apricot Ginger Beer Glazed Ribs

Grilled Pastrami Burger with Spicy Brown Mustard Mayo

Juicy garlic burger layered with BBQ sauce, pepperoncini, pastrami, veggies and spicy brown mustard mayo.

Ingredients

Burgers

  • 1 lb ground beef 80% grass fed beef
  • 1 clove garlic sliced very thin
  • 2 tbsp shallot chopped
  • 2 tbsp BBQ sauce your favorite
  • 1 tbs parsley chopped
  • 1 tsp kosher salt
  • 1 tsp pepper fresh ground

Spicy Brown Mustard Mayo

  • 1/4 cup mayonnaise made with avocado oil
  • 2 tbsp brown spicy mustard

Burger toppings

  • 4 hamburger buns
  • BBQ sauce
  • leafy lettuce
  • tomato sliced
  • red onions pickled or grilled
  • pepperoncini hot deli slices
  • pickles garlic or spicy
  • 1/2 lb pastrami thin sliced

Instructions

Burger

  1. In a medium size mixing bowl, add ground beef, garlic, shallot, BBQ sauce, parsley, salt, and pepper.  Gently mix together using a fork.  Form into 4 patties.  Press a thumb indentation in the middle of each burger.  Place each burger on a hot grill and cook until desired temperature is reached.  Approximately 5 minutes on each side for medium.  

  2. Spread each side of bun with a bit of butter.  Place on grill to toast while burger is cooking.  Remove from grill when lightly browned.

  3. Just before burger is cooked, place pastrami on grill and brown slightly.  Making sure not to dry out the pastrami.

Spicy Brown Mustard Mayo

  1. In a small mixing bowl, stir mayo and mustard together.  Cover and refrigerate until ready to use.

To assemble burger

  1. Spread BBQ sauce of bottom bun.  Layer with leafy lettuce, tomato slice, hamburger patty, desired pickles, peppers and onions, top with pastrami . Spread top bun with spicy brown mustard mayo.  Place on top of pastrami . Try to open your mouth wide enough to eat.

This is a very quick version of Christmas Stollen This is a very quick version of Christmas Stollen flavored bread. The sweet dough is filled with dried fruit, candied orange and lemon peel, and almonds. 

The dough is wrapped around a ribbon of marzipan filling. Bake until golden then dust heavily with powder sugar. 

I like to toast a thick slice then scoop out the warm marzipan and spread it all over my toasted Stollen 🤤
