Apple Pear Rose Cardamom Cider

Fresh pressed apples, oranges, and pears infused with a hint of rose and cardamom. Apple Pear Rose Cardamom Cider is a fresh twist on mulled cider.  Cider that is sweetened by nature.

Fresh pressed apple juice from local orchards is in abundance this Fall.  The farmers markets had bushels of pears.  I juiced the lovely pears and combined it with the sweet apple juice with a bit of tart fresh orange juice.  I infused the gently warmed juices with organic rose petals and a few cardamom pods.  Apple Pear Rose Cardamom Cider will replace my typical spiced cider this year.

I have always enjoyed sipping warmed, spiced cider on crisp Autumn days.  I was inspired to make apple pear rose cardamom cider while reading about “Wassailing the Apple Trees”.  There was a pagan traditional where a Wassail Bowl full of cider was carried out to the orchard for the tree.  They didn’t Wassail every tree in the orchard; they would pick the oldest tree and gathered around it. A piece of toast made from white bread would be dipped in the Wassail Bowl, and placed either on the roots or in the branches of the tree to attract good spirits. One of several possible Wassail songs would be sung. Then, the cider in the Wassail Bowl would be poured over the roots of the tree in hopes for a good apple crop the following year.

I would love to be involved with this Wassailing tradition.

For this simply cider recipe you will need:  4 cups fresh pressed apple juice, 2 cups fresh pear juice, 2 cups fresh orange juice, 1/4 cup organic rose petals, 5-6 cardamom pods.  That’s it!

In a 4 1/2 – 5 quart pot add apple juice, pear juice and orange juice.

Stir in the rose petals and cardamom seeds.  Over low heat gently warm the juices.  DO NOT BRING TO A BOIL.  Heat just until steam begins to rise from the juices.  Before the juice begins to simmer.  Remove from heat. Cover with a lid and allow the mixture to steep for 30 minutes.  Pour the mixture through a fine sieve to remove rose petals and cardamom and discard.

Gently reheat before serving.

Ingredients

  • 4 cups fresh pressed apple juice
  • 2 cups fresh pear juice
  • 2 cups fresh orange juice
  • 1/4 cup organic rose petals
  • 5-6 cardamom pods

Instructions

  1. In a 4.5 to 5 quart pot gently heat apple, pear, and orange juices.  DO NOT BOIL.  Stir in rose petals and cardamon pods.  Once steam barely begins to rise, remove from heat and cover.  Allow to steep for 30 minutes.  Pour warm juice through a fine sieve to remove petals and cardamom.  Discard.  Gently reheat before serving.

This is a very quick version of Christmas Stollen This is a very quick version of Christmas Stollen flavored bread. The sweet dough is filled with dried fruit, candied orange and lemon peel, and almonds. 

The dough is wrapped around a ribbon of marzipan filling. Bake until golden then dust heavily with powder sugar. 

I like to toast a thick slice then scoop out the warm marzipan and spread it all over my toasted Stollen 🤤
