Stir chia seeds into 1 cup fresh orange juice. Cover. Let stand for at least 15 minutes or until the juice has thickened and the chia seeds are soft. Store in refrigerator for 3-4 days.
Juice the beets, grapefruit, and oranges. Add 1-2 tablespoons of the soaked and thickened chia seeds. Stir. Serve.

Feel free to add juiced ginger or turmeric...or both! For added the anti-inflammatory and cancer-inhibiting properties.
