Soaked chia seeds:

  • 1 cup fresh pressed or squeeze orange juice

  • 3 medium beets
  • 1 large pink grapefruit
  • 1 blood orange
  • 1 navel orange
  • 1/4 cup chia seeds

  1. Stir chia seeds into 1 cup fresh orange juice.  Cover.  Let stand for at least 15 minutes or until the juice has thickened and the chia seeds are soft.  Store in refrigerator for 3-4 days.
  2. Juice the beets, grapefruit, and oranges.  Add 1-2 tablespoons of the soaked and thickened chia seeds.  Stir.  Serve.

Recipe Notes
