1 1/2cupsdry French lentils
2tablespoonsolive oil
1large oniondiced
2carrotspeeled and diced
2celery ribsdiced
8clovesgarlicsmashed and chopped
8cupschicken or vegetable stock
1teaspoondried thyme
1bay leaf
salt and pepper
1/3cupfresh parsleychopped
Optional:
Roasted cauliflower and broccoli
diced sauteed ham
Instructions
Rinse lentils and place in a large bowl. Cover with water and soak for 24 hours.
In a large pot saute onions, carrots and celery in olive oil. Saute for a few minutes then add chopped garlic. Cook until onions are translucent and carrots and celery begin to soften. Add stock, thyme and bay leaf. Cover and simmer for about an hour or until lentils and vegetables are tender. Season with salt and pepper. Right before serving add a handful of chopped fresh parsley.
Ladle soup into bowls and top with roasted cauliflower and broccoli or sauteed ham...or both.
