Chicken Pot Pies

I love comfort food, and there's nothing like chicken pot pie. Making them in individual servings is fun for a party or to create lunch to go.

  • 2 tablespoons parsley
  • 3 sage leaves
  • 2 teaspoons rosemary
  • 2 teaspoons thyme
  • 1/4 teaspoon nutmeg
  • 4 tablespoons butter
  • 3 tablespoons flour
  • 1/2 small onion chopped
  • 2 tablespoons more butter
  • 1 1/2 cups red chopped potato
  • 2 carrots chopped
  • 3 cups chicken stock
  • 1/2 cup heavy cream
  • 2 cups cooked chicken
  • Pie dough for one pie crust or 1 sheet puff pastry
  • 1 egg beaten
  • 6 individual serving containers jars, bowls, crocks, etc.


  1. Mix chopped herbs and nutmeg in a small bowl.  Set aside.  In a small sauce pan, melt butter.  Add flour and stir until mixture thickens to make a roux.  Cook an additional 30-60 seconds.  Whisk until smooth.  Set aside.
  2. Melt remaining 2 tablespoons butter in a medium size pan.  Add chopped onion.  Saute until translucent. Add potatoes and cook until just beginning to brown. Add carrots.  Saute until the potatoes and carrots just begin to soften.  Add chicken stock and simmer for about 30 minutes or until vegetables are tender.  Stir in heavy cream, one tablespoon of the roux and fresh herbs. Cook until thickened.  If sauce still appears to be thin add another tablespoon of the roux until desired consistency is reached.  Gently stir in cooked chicken.  Ladle into individuals jars or a 9 x 9-inch baking dish.
  3. Roll pie dough or puff pastry dough to about 1/4-inch in thickness.  Cut with a 4-inch round cutter for individual pies or a 10 x 10-inch square.  Place dough on top of filling.  Brush with beaten egg.  Cook in a preheated 375F oven.  Bake for 20 minutes or until golden brown.  Allow to cool slightly before eating.
