Rice Crispy Treats

A microwave makes quick work of this fun treat. Perfect when you are in a rush or a surprise occasion pops up.

  • 1/4 cup butter margarine not allowed but I'll accept coconut oil
  • 16 ounce bag of marshmallows notice that's NOT a 10-oz bag
  • 5 - 5 1/2 cups crispy rice cereal


  1. Butter a 9 x 13-inch or a 9 x 9-inch pan.  Set aside. Place butter in a large microwave safe bowl.  Heat in microwave for 30 seconds.  Remove and add marshmallows.  Stir to coat marshmallows with butter.  Return to microwave for only 60 seconds.  Remove and stir until marshmallows have melted.  Add cereal and gently stir.  Pour into buttered pan and lightly smooth out the tops without compressing to much. Let set for at least 30 minutes before cutting with a sharp knife.  Makes 9 - 15 squares depending on what size pan is used.

Stove top method:

  1. In a large pan melt butter.  Add marshmallows and stir until marshmallows begin to melt. Remove from the heat and stir until most of the marshmallows have melted.  Add cereal and stir gently.  Pour into prepared pan.
