Coconut Pecan Date Bites

Super quick and easy recipe for a healthy little bite.  Made with dates, almond butter, and coconut.  Topped with a whole pecan with an optional chocolate drizzle

Coconut Date Mixture:

  • 1 cup dates fresh, soft, and pitted
  • 1/2 cup almond butter
  • 1/2 cup unsweetened coconut shredded
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla


  • 24-26 pecans whole
  • 1/4 cup unsweetened coconut shredded
  • 1/2 cup semi-sweet chocolate melted


Coconut Date Mixture:

  1. Line a baking sheet with waxed paper or silicone liner.  Set aside.

  2. In a bowl of a food processor, fitted with a metal blade, add pitted dates, almond butter, coconut, salt, and vanilla.  Process until mixture will hold together.  

  3. Using a little less than 1 tablespoon of the mixture, form into a ball that holds together. Roll the ball into shredded coconut and put on the prepared baking sheet.  Using your finger or thumb slightly flatten the ball.  Spread a bit of almond butter on the bottom of the pecan and press into the flattened dough.  Drizzle with melted chocolate, if desired.

  4. Store in an airtight container in a refrigerator.
